The Everglades, a region not typically associated with oyster farming, is now home to a thriving industry. Despite initial reservations, the oysters are proving to be a hit in Michelin-starred restaurants.
“We have to focus on educating and combating this stigma or as we like to call it, prejudice,”
say Josh Wilkie and Fabio Galarce, who harvest oysters for top restaurants. They note that the Everglades, often seen as a muddy swamp, is actually a
